The brotherhood of the knights of the Black Pudding, la Confrérie des Chevaliers du Goûte Boudin, it was founded in 1962 and is one of the worlds greatest authorities on Black pudding who count the great variety of blood sausages of France, to preserve or, even to revive the regional manufacturing processes, not only Percheron but of each French province.
